Tomatokeftedes (Tomato Balls)

INGREDIENTS

  • 1kg peeled and mashed tomatoes (cherry tomattos preferred)


  • 4 tbsp chopeed spring onion


  • 3 tbsps minced fresh onion


  • 1 tbsp of anethum or basil or peppermint (or all 3 mixed based on preference)


  • 1 shredded zucchini


  • dill


  • salt


  • pepper


  • flour (as required)


  • sunflower oil for frying



SUMMARY

Who likes balls? We do! Deep fried Tomato balls! A traditional Santorini dish, diced up cherry tomato, red onion, green onion, dill, parsley, caper, flour, water, mix rest then deep fry till golden and crispy! Served with a Greek salad and tzatziki. It literally couldn’t get more Greek, unless you where to smash the plate after eating it.


Slut it up to the max by adding some feta to the mix. Though that may be a cultural hate crime. Was too afraid to ask.


RECIPE

  1. Mix all ingredients in a large bowl


  2. Add flour and work the mixture till it thickens


  3. If too elastic add more flour (in order to thicken)


  4. Drop spoons of mixture into the oil


  5. Fry them on both sides till they have a honey like colour


  6. Drain oil in a tissue
