Steak bagel with miso butter onions, blue cheese and roasted garlic mayo

INGREDIENTS

  • 1 x 10oz sirloin steak


  • 2 x bagels


  • 1 x large white onion finely sliced


  • 1 x tbsp butter


  • 1 x tbsp white miso paste


  • 1 x 1/2 tbsp brown sugar


  • 2 x garlic cloves


  • 2 x tbsp mayonnaise


  • 20g blue cheese



SUMMARY

As you can probably tell our attempt at veganuary is not going well. But judging by the look of this Steak bagel with miso butter onions, blue cheese and roasted garlic mayo by @bboxfood you can probably guess why. Sweat your onions , add your miso sugar and pinch of salt, fry your streak and then assemble on your bagel alongside some garlic mayo and grated blue cheese. A sandwich to be enjoyed at any time of the day.


Slut it up to the max with some truffle salt


RECIPE

  1. Start by putting cheese in the freezer as it’s easier to great


  2. Sweat down the onions in the butter until they are nice and brown, add the miso, the sugar, pinch of salt and splash of water. Cool down until brown and sticky


  3. Fry or grill your steak to your liking by bringing up to room temp, rubbing with a bit of oil and seasoning and searing in a hot pan until reaching your desired temp (6-8 mins roughly for medium rare) rest well before slicing


  4. Roast the garlic cloves in an oven for 20 mins at 160c before mincing well and mixing with the mayo.


  5. Slice the bagel through the centre and toast, start with the mayo then the sliced steak grate over some of the blue cheese over the steak and top with the miso onions.
