Pecan Triple Chocolate Skillet Cookie

  • 120g butter

  • 115g caster sugar

  • 160g brown sugar

  • 50g chopped pecans

  • 1 egg

  • 1 yolk

  • 1 tsp baking powder

  • 1 tsp sea salt

  • 160g flour

  • 150g chocolate chips


  1. Melt the butter in a cast iron or ceramic pan (or anything oven size)

  2. Allow the butter to begin to brown slightly then add the pecans and both sugars

  3. Stir and cool before adding the egg and yolk

  4. Stir again then add the baking powder, salt and flour

  5. Bring together into a dough press into the bottom of the pan and throw over the chocolate chips.

  6. Bake at 180c for approx 20 mins until crisp on the outside and slightly gooey in the centre

  7. Slut this up to the Max with a scoop of your favourite ice cream
