Meatless Juicy Lucy Egg Muffin

  • 2 Meatless Farm sausage patties

  • 1 English muffin

  • 1 egg

  • Butter / Vegan butter

  • A Melty cheese


  1. Take two meatless sausage patties and roll into a ball

  2. Then take a some greaseproof paper and a heavy pan - put the greaseproof paper over the pattie so it doesn't stick and then squash those balls!

  3. Do the same to the other pattie so you now have two flat meatless sausage discs.

  4. Now take your grated cheese and add a pile of cheese in the middle - enough cheese so it will seal.

  5. Now lay the other patty on top and then create a seal by pushing the two layers together.

  6. You want this to be super tight so no cheese spills out.

  7. Now get your pan on a medium-high heat and then cook the patties for about 4 minutes on either side until you have a nice caramelisation.

  8. This is a good time to start your egg - we used an egg ring to keep the egg contained (you can make one with tinfoil if you don't have any).

  9. Toast your muffins and butter.

  10. Now it's time to build - Muffin, Meatless Farm sausage pattie, egg and extra cheese if you so desire.

  11. Cut and watch your cheese oooze.
