RECIPE

For Hash Browns

  1. Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.

  2. Heat butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.

  3. Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.

Sausages + bacon + black pudding + Tomatoes

  2. In the same pan get your bacon and cook until your desired crispynesss.

  3. We can also add the tomatoes to the pan here

  4. If you want extra crispy instead of frying dust with flour and put on a tray in the oven on high heat

  5. On a higher heat cook your fry your black pudding until slightly crispy

  6. Cut your shittake mushrooms in half and add to pan with a touch of thyme.

Baked Beans

  1. Heat oil in a sauce pan over a medium heat.

  2. Add the garlic and allow to sizzle but be careful not to burn.

  3. Reduce heat to low, add the smoked paprika and stir.

  4. Add the passata, puree and stock and then simmer for around 20 mins (until the sharp taste of tomato has gone and the sauce has thickened.)

  5. Add the beans and simmer for a further 10 mins.

Bacon chop

  1. Get your grill or pan to a high heat as possible

  2. Add to the pan on grill and cook for 3 mins either side

  3. Take your maple syrup and butter mixture and brush on both sides and cook for a further minute to caramalize slightly

  4. We want to hit an internal temp of 145F

Bone Marrow

  1. Get your oven to 220C and add the bone marrow for about 20 minutes until cooked.

  2. Tak one of the bone marrows and add to a non stick frying pan along with some veg oil

  3. Take your slices of bread and fry in the bone barrow oil mixture
