Crab Gratin

  • 50g grated parmesan

  • 2 tbsp mayo

  • 1 egg yolk

  • bunch of chopped chives

  • 50ml double cream

  • 1tsp colmans mustard

  • 400g white crab meat or king crab meat

  • 50g panko breadcrumbs



Here is another little dish we made the other day - crab gratin / crab thermidor we are not which one is correct but they taste equally as good. Make your gratin:  cheese, mayo, egg yolk, chives, cream, and colmans. Fold in your crab meat top with panko , parmesan then bake until golden. Before you ask that weird thing on the top is a king crab claw.

Slut it up to the max with a crusty roll and some lobster butter.


  1. Take your mixing bowl and mix the cheese, mayo, egg yolk, chives, cream, and colmans mustard.

  2. Cut up your crab meat and fold into the mixture season well.

  3. Put your mixture into a oven proof dish

  4. Top with panko breadcrumbs and grated parmesan.

  5. Place your dish into a preheated oven at 190 degrees for 10 minutes until bubbling.

  6. Finish off at high heat under grill for 1 minute until golden.

  7. If using king crab steam claw for 2 minutes and then toss in butter

  8. Serve with crab claw on top and a crusty loaf.
