2 chicken breast diced
400-500ml good quality chicken stock
Handful chopped flat leaf Parlsey
4 garlic cloves finely minced
200g grated mozzarella or cheddar
40g panko breadcrumbs
Salt and pepper
Heat a splash of olive oil in a frying pan, brown the chicken breast and season.
Add the orzo into the chicken pan, stir through then add the stock. Stir regularly until the stock reduces and the orzo becomes al dente add a little more stock if needed.
Add 1/4 of the butter and 1/2 of the parsley to the chicken/orzo mix, stir through remove from the heat.
Add the mix to a oven proof dish
Melt the remaining butter in the same frying pan you used before add the garlic, parsley and the breadcrumbs. Season with salt and pepper.
Cover the chicken mix with the cheese then top with the breadcrumbs.
Bake at 190c until breadcrumbs are golden brown.
Slut this up to the max by grated parmesan over the top to serve
