INGREDIENTS

For the chilli Jam


  • 1 scotch bonnet chilli


  • 1 yellow pepper


  • 1 tbsp white wine vinegar


  • 6 tbsp caster sugar


  • 100ml water 


The rest


  • 2 slices thick white bread


  • 8 slices smoked streaky bacon


  • 4 large eggs


  • 50g butter


  • 1 tablespoon of crème fraiche


  • 4 thick slices of halloumi


  • Chopped chives



SUMMARY

Bacon , halloumi scrambled eggs in a chilli jam. A super simple dish made by @bboxfood and perfect way to start your Sunday. Take your chilli, vinegar, pepper and sugar and heat for a sticky jam, cook your halloumi in bacon fat and then cook your eggs slowly for the perfect scrambled eggs.


Slut this up to the max with sausage, black pudding , cheese , hash brown and you have pretty much made a Slutty Butty.


RECIPE

  • To Make the Jam, put all the ingredients in a blender, blitz completely then cook on a medium heat in a saucepan until thick and sticky


  • In a frying pan cook the bacon until the fat starts to render and you get a good colour on both sides.. remove the bacon and toast the bread and char the halloumi in the bacon fat


  • To make perfect scrambled eggs in a saucepan add the eggs and the butter, mix them well and put over a medium heat removing every minute stir.. allow them to come together gradually on and off the heat you need to keep them soft so take them off just before you think they are done as they will keep cooking.


  • At this point season the eggs, add the crème fraiche and chives


  • Serve all together as pictured
