  • 2 Corns (on cob)

  • 1/2 tsp cumin

  • 1/2 tsp paprika

  • 1/2 tsp cayenne

  • 1/2 tsp Tajin

  • Mayo to cover (we used Kewpie)

  • 1/4 cup Parmesan /feta/ contia (all will work)


We get our Mexican Groove on with these home made Elote. After all this meat it felt good to get some vegetable in us foodSlut style. We grilled the corn , brushed it with mayo , rolled the corn in Parmesan cheese and then finished it off with a sprinkling of our chilli powder mix. Slut it up to the max with a shot of tequila


  1. On a grill / BBQ wrap you corn in tin foil and cook for around 15 mins turning occasionally until evenly cooked. There may be some slightly charcoaled pieces of corn.

  2. Mix together your spice mix (cumin, paprika, cayenne, Tajin classico)

  3. With a brush or with a knife take your mayo and spread all over the corn until completely covered.

  4. Now smother your grated cheese all over the corn until it sticks and you have a nice coating

  5. Now sprinkle your spice mix over your corn.

  6. To finish sprinkle some coriander and a squeeze of lime.
